Cut from the top blade, the flat iron is one the most naturally tender sections of the cow. A favorite among butchers, and one we reach for often. 

Ours comes from cattle raised on open pasture, where they graze in calm, low-stress environments that produce clean, deeply flavorful beef. No hype. No shortcuts. Just a great cut, raised with care. Sold in 16 oz vacuum sealed packs.
